Lauren Shiner is also a beekeeper and harvests the raw honey produced by the bees who pollinate her organic vegetable gardens. They also enjoy the lush, mature Carrollwood landscapes.

It is a rich and complex raw honey unlike the single note Tupelo or tangy Orange Blossom. Honey is like wine: it takes on the unique characteristics of its region and its season.

Raw honey is said to reduce allergies, and its anti-bacterial and anti-fungal properties are commonly used to heal wounds. Raw unprocessed honey will last without refrigeration for years. At worst, it will crystallize when stored at temperatures between 40 and 80 degrees. Put it in a sunny window and it will reliquify, thus maintaining the beneficial enzymes.

Bee kind to bees: When dealing with insect problems in your own garden, check the label for bee toxicity. Lethal to bees: Bayer Fruit & Vegetable Insecticide (Imidachloprid), Malathion, Carbaryl (Sevin Dust) and pyrethroids. Pour systemic fungicides around root zone, do not spray, to prevent deadly combinations with insecticides. Systemics still affect bees, but not to the extent of spraying.

Beware Honey Laundering: Not all honey sold in the US is from a healthy source. China has evaded an almost worldwide ban by relabeling through Australia, Malaysia, Thailand, Vietnam, India, and Turkey. Also, only 51% of honey must be from the US to be labeled American. Avoid contaminated honey by buying locally.

Sustainability: Support urban beekeeping initiatives, like bee coops in schools, micro-grants for start-ups, gardener education, and buy-local efforts.
