Lauren Shiner is also a beekeeper and harvests the raw honey produced by the bees who pollinate her organic vegetable gardens. They also enjoy the lush, mature Carrollwood landscapes.

It is a rich and complex raw honey unlike the single note Tupelo or tangy Orange Blossom. Honey is like wine: it takes on the unique characteristics of its region and its season.

Raw honey is said to reduce allergies, and its anti-bacterial and anti-fungal properties are commonly used to heal wounds. Raw unprocessed honey will last without refrigeration for years. At worst, it will crystallize when refrigerated and reheating it to 120 degrees will maintain the beneficial enzymes.

Bee kind to bees: When dealing with insect problems in your own garden, check the label for bee toxicity. Lethal to bees: Bayer Fruit & Vegetable Insecticide (Imidachloprid), Malathion, Carbaryl (Sevin Dust) and pyrethroids. Pour systemic fungicides around root zone, do not spray, to prevent deadly combinations with insecticides.

Contamination: Not all honey sold in the US is from a healthy source. China has evaded an almost worldwide ban by relabeling through Australia, Malaysia, Thailand, Vietnam, India, and Turkey.

Sustainability: Support urban beekeeping initiatives, like bee coops in schools, micro-grants for start-ups, gardener education, and buy-local efforts.
